This week, I have an easy and healthy recipe for you – Fried Rice. It is always easy to make using any ingredient you like or is available at home. It is a great dish to make especially when you have no time and just want to make something quick. And most importantly, children love fried rice!
I use brown rice here, which gives the dish a little bit extra fiber and lots of colorful vegetables as well – hence the name! Minced beef is used here but you can leave it out to make the dish vegetarian; tofu is a good alternative as well.
- 4 cups cooked brown rice (cool or over night rice)
- 150g minced beef
- 1 carrot, finely chopped
- ½ cup frozen peas
- ½ cup frozen or can sweet corn
- 2 tbsp. Oyster sauce (use Vegetarian oyster sauce if vegetarian)
- 2 tbsp. soy sauce, or plus more to taste
- 1 tsp. sesame oil
- Vegetable oil
- Toasted sesame seeds for garnish (optional)
Heat a tablespoon of vegetable oil in a wok on high heat; add the minced beef and fry until brown. Tip in the carrot and fry for another minute. Add the brown rice and continue frying until well combined and the rice is warmed through.
Throw in the peas, the sweet corns and carry on frying. When the veggies are cooked add the oyster sauce and soy sauce. Keeping stirring until everything is coated evenly with the sauce. Have a taste, add more soy sauce if desired. Drizzle in the sesame oil. Serve the rice in bowls and sprinkle the dish with the toasted sesame seeds.
