You are going to love what I am about to tell you: this Grilled avocado tartine only takes you 15 minutes to make, it is simple but yet full of flavours! The perfect food for a lazy day! It is a bit like guacamole on toast with grilled cheese; creamy avocado with a hint of tangy lime, combined with the sweetness from the cherry tomatoes, which is spread on a crusty toast, crunchy and creamy, the taste then elevated by the grilled maozzarella, a perfect element to finish off this amazing tartine.
As you know avocado is a so called super food, which is full of healthy fats and nutrients, it is also easy to be integrated into different recipes; I like it in my smoothies to enhance the creaminess, on my toasts in place of butter, and in my sushi rolls of course – one of my daughters favourites! The combinations are unlimited, so why wouldn’t you include it in your diet? No reason at all, so this recipe is one of the many possibilities
(Makes 4 tartines, easily double)
- 1 ripe avocado, halved and stoned
- A small handful of cherry tomatoes, chopped
- A small bunch of coriander, leaves picked, chopped
- Juice of half a lime, more to taste
- Salt and pepper to taste
- 4 slices of rye bread or crusty bread
- 1 ball of mozzarella, thinly sliced
Spoon and mash the avocado in a medium bowl, add chopped tomatoes, coriander leaves, half of the lime juice, salt and pepper, mix well and have a little taste, if needed, add more lime juice and salt and pepper to reach the desired taste.
Spread the avocado mix evenly onto the bread. Lay the mozzarella slices on the tartines. Place the sliced bread on a baking sheet and put under the grill (oven-grill) for 7-8 minutes, or until the mozzarella is bubbling and takes on a slightly brown colour. Remove from the grill and serve warm. I like to serve these with fresh berries, but it tastes good just on its own.
