I love the feeling of my teeth sink into a cold, plump fig from the fridge every late summer morning, the chill does a better job of waking me up than my strong Oolong tea. After a week of soup cooking, I am ready to try out different recipe again! This week, I am sharing this millet patties recipe with you and I hope you like it! Since I have cooked a big batch of millet last week (for the soups) and I had plenty of left over in the fridge which need to be used up. So I decided to try making patties with them (as I always wanted to make something different with millet other than just use it as a side dish). I love millet as it is a very versatile ingredient, it is also a good source of nutrients and fibre. It takes very little time to cook, I sometimes make ‘fried rice’ with millet instead of rice and it is definitely a popular dish in my family! I always love fritters, fritter of all kind – shrimps, fish, sweet potato, green beans, you name it! I remember when I was a kid, I often found street vendors selling sweet potato fritters. They were the best fritters I remember, when you take a bite, your teeth first encounter the light and crunchy batter then they sink into a soft and sweet flesh. This is something that I remember so well, a great memory of my childhood. The important element of a good fritter is the batter, if you do it right, you will get fritters that are not greasy, but crunchy and full of flavour. A trick to make the batter light is to add sparkling water instead of normal water. Make sure the oil for deep-frying is hot enough and not to overcrowd the pan with vegetables so the batter won’t get greasy. Colourful Easter Egg Salad

I am so excited to share with you this colourful egg salad recipe. Oh…it is not the eggs that are colourful (at least not after they are shelled to make this salad!), it is the salad itself, which consists of healthy fruit and vegetables! Truth be told, Easter wasn’t really a special festive day for me before I became a mother. Since my daughter goes to kindergarten, there is now always painting Easter eggs, making bunnies, and of course lots of chocolate. Anyway, what do we do with all the cooked eggs during and after Easter? This is where my inspiration for this week’s recipe came from.  I am sure everyone has ideas one way or the other about how to eat up these eggs.
